Learning Outcomes

Upon completing the course, participants will be able to:

  • Identify and assess client nutritional needs with emphasis on client dietary requirements, balanced nutrition and nutritional warning signs.
  • Interpret a client’s care plan to determine dietary restrictions, preferences and special requirements to support safe and effective feeding practices tailored to the client’s needs.
  • Demonstrate techniques to assist clients with dysphagia or eating difficulties while maintaining dignity and social engagement.
  • Identify safe food handling practices, foodborne illness, and recognise Potentially Hazardous Foods (PHFs).
  • Apply the Clean, Separate, Cook, Chill principles in food preparation, storage and serving.
  • Practice personal hygiene and habits for food contamination prevention.
  • Apply safe practices to measure thawing, cooling, refrigeration and storage procedures to prevent bacterial growth, being cognisant of the temperature ranges to ensure food safety.
  • Apply problem-solving to prevent dietary issues and foodborne illness, take corrective actions and report issues.
